Cooking Experiment: Vegan "Beef" Stroganoff

I invented this and made it tonight. It's really easy and my friends really liked it. Feel free to share!

Here's what you need:
cooking oil
2 medium onions sliced very thin
2 cups sliced portabella mushrooms
1/3 cup dry sherry
vegan ground beef substitute (I like Morningstar Farms but feel free to use your favorite)
a can of tomato puree
one container of Tofutti "sour cream"
noodles cooked to package directions

To make: Heat the oil in a skillet and saute the onions and mushrooms until they're brown and starting to stick to the pan a little. Pour in the sherry to unstick them, and then add the meat substitute and tomato puree. Let it simmer for about five minutes and take it off the heat. Stir in the Tofutti sour cream and serve it over the noodles. Done!
 It's good with freshly ground pepper and Moscato.
